CURED CUISINE was created to bring the craft of charcuterie to chefs and serious foodies by staging charcuterie classes throughout the United States. Our classes are taught by Chef Brian Polcyn, who is nationally recognized as an authority on the technique of charcuterie, and co-author of the book Charcuterie & Salumi, with Michael Ruhlman, one of the most highly regarded food writers today.
Cured Cuisine has recently held classes in South Florida, Orlando, DC, Atlanta, Nashville, Denver, Chicago, San Francisco, Portland, Oregon, NJ and San Antonio Many of the top chefs in each city were in attendance, including chefs from TV shows such as Hell’s Kitchen. Taste, Chopped and Top Chef. Plus, nationally known chefs such as David Burke, Morimoto, Emeril, Bradley Ogden, Kevin Rathbun and Norm Van Aken sent chefs to our classes
